Persimmon Spice Cake


For dessert today we're serving freshly baked Persimmon Spice Cake with a dollop of homemade lemon-vanilla sherbert. Fresh hot coffee on the house.

This recipe appears every December in local papers in Napa and Sonoma Counties, when the trees are literally dripping with ripe persimmons. And this is just what to do with them. Just make sure the persimmons are ripe, squishy even. Make two cakes, the first will disappear in a flash.
