Kerry Cake
Traditional Irish Cake from County Kerry

  • 3/4 cup butter
  • 1/2 cup sugar
  • 3 eggs
  • 1 lemon rind grated
  • 3 medium apples, peeled, diced
  • 1.5 cups cake flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder

In mixer, cream butter and sugar. Beat in eggs one at a time. Stir in lemon rind and apples. Sift together flour, salt and baking powder and fold into first mixture. Pour into greased oblong or loaf pan. Bake at 375º for 30 minites or until knife comes out clean.

Top with favorite icing, cinnamon sugar or serve warm topped with ice cream or frozen yogurt.

Note: If using a loaf pan, bake slower and slightly longer at a lower temperature.
